Fat Fig Sauvignon Blanc
An elegant balance of tropical and herbaceous aromas with a burst of ripe fig on the palate.
Grapes are sourced from vineyards in the Piekenierskloof region. These trellised vineyards grow on sandy, loam soils where yields are meticulously managed, to below 6 tons per hectare. Grapes were picked by hand very early in the morning allowing for the fruit to retain its natural flavour. Free-run juice was used, allowed to settle for two days and inoculated. Fermentation under controlled conditions. After fermentation, the wine was left on the lees before bottling.
